Ingredients
  

  • 1 15oz Can of Chickpeas drained and rinsed
  • 2 tbsp Vegan Mayo or Tahini
  • 1 tsp Dijon Mustard
  • 1 tsp Garlic Powder
  • ½ tsp Smoked Paprika
  • ½ tsp Salt adjust to taste
  • ¼ cup Diced Celery
  • ¼ cup Diced Red Onion
  • ¼ cup Shredded Carrots
  • 1 Lemon juice from ½

Instructions
 

  • Mash the Chickpeas: In a medium bowl, lightly mash the chickpeas with a fork, leaving some chunks for texture.
    2. Mix the Dressing: Add vegan mayo, Dijon mustard, garlic powder, smoked paprika, and lemon juice to the chickpeas. Mix well.
    3. Add the Veggies: Stir in the celery, red onion, and carrots. Adjust seasoning if needed.
    4. Assemble the Wraps: Scoop the chickpea mixture into lettuce leaves or tortillas. Roll up if using wraps.
    5. Serve: Enjoy immediately or pack for an on-the-go lunch!

    • 1 tbsp chopped fresh dill or parsley
