Ingredients

  • 1 15-oz can chickpeas, drained and mashed – The perfect high-protein base that absorbs all the smoky BBQ flavors.
  • ½ cup BBQ sauce – Store-bought works great or make your own for a healthier option.
  • ½ tsp smoked paprika – Enhances the smoky BBQ vibes.
  • ½ tsp garlic powder & ½ tsp onion powder – Essential for bold savory depth.
  • ¼ tsp salt – Balances the flavors.
  • 8 small corn tortillas – Corn tortillas crisp up beautifully in the air fryer.
  • 1 tbsp olive oil – For brushing helping achieve that perfect golden crunch.

Optional Toppings:

  • Avocado slices – Adds creamy richness.
  • Salsa – A fresh zesty contrast to the smoky filling.
  • Vegan sour cream – Cool and tangy for balance.

Instructions

Step 1: Preheat Your Air Fryer

  • Set your air fryer to 375°F (190°C) and let it heat while you prepare the filling.

Step 2: Make the BBQ Chickpea Filling

  • In a mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth. Stir in the BBQ sauce, smoked paprika, garlic powder, onion powder, and salt.

Step 3: Assemble the Taquitos

  • Spoon about 2 tablespoons of the chickpea mixture into each tortilla, then roll them tightly and place them seam-side down.

Step 4: Brush with Oil & Air Fry

  • Lightly brush or spray the taquitos with olive oil to help them crisp up. Place them in the air fryer basket in a single layer (work in batches if needed).
  • Air-fry for 8-10 minutes, flipping halfway, until golden brown and crispy.

Step 5: Serve and Enjoy!

  • Plate the taquitos and top with avocado, salsa, or vegan sour cream. Enjoy immediately for the best crunch!

💰 Budget Tip: Make homemade BBQ sauce to save money and control the ingredients. A quick mix of tomato paste, vinegar, maple syrup, and spices does the trick!
⏳ Time Saver: Prep the chickpea filling ahead of time and store it in the fridge for up to 3 days. When ready to eat, just assemble and air-fry!
